Making the Syrup
- Blend the cubed watermelon in a blender until smooth.
- Strain the watermelon puree through a fine mesh strainer into a saucepan to remove pulp.
- Add the sugar and lemon juice to the watermelon juice in the saucepan.
- Heat the mixture over medium heat, stirring until the sugar is fully dissolved.
- Bring the mixture to a gentle boil and let it simmer for about 10 minutes, until slightly thickened.
- Remove from heat and let cool before transferring to a bottle or jar for storage.
