Ingredients
  

Burger Patties
  • 1 cup cooked black beans mashed
  • 1 cup cooked quinoa
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1 cup bell pepper finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 egg large beaten
  • 1 cup breadcrumbs for binding
Toppings
  • 4 slices cheese optional
  • 4 buns burger buns
  • 1 cup lettuce washed and dried
  • 1 tomato sliced
  • 1/2 cup pickles sliced
  • 1/4 cup ketchup optional
  • 1/4 cup mustard optional

Method
 

Prepare the Patties
  1. In a mixing bowl, combine the mashed black beans, cooked quinoa, chopped onion, minced garlic, and chopped bell pepper.
  2. Add cumin, smoked paprika, beaten egg, breadcrumbs, salt, and pepper. Mix until well combined.
  3. Form the mixture into 4 patties.
Cook the Patties
  1. Heat a skillet over medium heat and add a little oil.
  2. Cook the patties for about 5-7 minutes on each side, until golden brown.
  3. If using cheese, place a slice on each patty during the last minute of cooking to melt.
Assemble the Burgers
  1. Toast the burger buns on the grill or in the skillet.
  2. Place a patty on each bun and top with lettuce, tomato, pickles, ketchup, and mustard as desired.
  3. Serve immediately and enjoy!
