Ingredients
  

Burger Patties
  • 1 can black beans drained and rinsed
  • 1 cup cooked quinoa
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup carrot grated
  • 1 cup bread crumbs preferably whole wheat
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 large egg beaten
Toppings
  • 4 slices cheese optional
  • 4 buns burger buns whole grain recommended
  • 1 cup lettuce shredded
  • 1 tomato sliced
  • 1/2 cup pickles sliced
  • 1/4 cup ketchup to taste
  • 1/4 cup mustard to taste

Method
 

Prepare the Patties
  1. In a mixing bowl, mash the black beans with a fork until mostly smooth.
  2. Add cooked quinoa, chopped onion, minced garlic, grated carrot, bread crumbs, cumin, paprika, salt, pepper, and beaten egg. Mix until well combined.
  3. Form the mixture into 4 equal patties.
Cook the Patties
  1. Heat a skillet over medium heat and add a little oil.
  2. Cook the patties for about 5-7 minutes on each side, or until golden brown.
  3. If using cheese, place a slice on each patty during the last minute of cooking to melt.
Assemble the Burgers
  1. Toast the burger buns lightly on the grill or in the skillet.
  2. Place a patty on each bun and top with lettuce, tomato, pickles, ketchup, and mustard as desired.
  3. Serve immediately and enjoy!
