Ingredients
  

Chicken and Salad Base
  • 2 cups cooked chicken breast, diced grilled or roasted
  • 4 cups mixed greens such as romaine, spinach, or arugula
  • 1 cup cucumber, diced peeled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled optional
Tzatziki Dressing
  • 1 cup Greek yogurt
  • 1 medium garlic clove, minced
  • 1 medium cucumber, grated excess water squeezed out
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil

Method
 

Prepare the Chicken
  1. Grill the chicken breasts over medium heat until fully cooked, about 6-7 minutes per side. Let them rest before dicing.
Make the Tzatziki Dressing
  1. In a mixing bowl, combine Greek yogurt, minced garlic, grated cucumber, chopped dill, lemon juice, and olive oil. Mix well and season with salt and pepper to taste.
Assemble the Salad Bowl
  1. In a large bowl, combine mixed greens, diced chicken, cucumber, cherry tomatoes, red onion, and feta cheese. Drizzle with tzatziki dressing and toss gently to combine.
