Ingredients
  

Crust
  • 1 pre-made pie crust pie crust store-bought or homemade
Filling
  • 4 cups sliced fresh tomatoes preferably heirloom
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

Method
 

Prepare the crust
  1. Preheat the oven to 375°F (190°C). Place the pie crust in the pie dish and set aside.
Make the filling
  1. In a mixing bowl, combine the sliced tomatoes, mozzarella cheese, cheddar cheese, mayonnaise, basil, parsley, salt, pepper, and garlic powder. Mix well.
Assemble the pie
  1. Pour the filling into the prepared pie crust, spreading it evenly.
Bake the pie
  1. Place the pie on a baking sheet and bake in the preheated oven for 45 minutes, or until the filling is bubbly and the crust is golden brown.
Serve
  1. Let the pie cool for a few minutes before slicing. Serve warm or at room temperature.
