Ingredients
  

Couscous Base
  • 1 cup pearl couscous uncooked
  • 2 cups vegetable broth or water
Vegetables
  • 2 cups cherry tomatoes halved
  • 1 cup fresh basil chopped
  • 1 clove garlic minced
Seasoning
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Cooking Couscous
  1. In a pot, bring the vegetable broth to a boil.
  2. Add the pearl couscous, reduce heat to low, cover, and simmer for about 10-12 minutes until tender.
  3. Remove from heat and let it sit covered for 5 minutes.
Preparing Vegetables
  1. In a large bowl, combine the halved cherry tomatoes, chopped basil, and minced garlic.
  2. Drizzle with olive oil, and season with salt and pepper. Toss gently to combine.
Combining Ingredients
  1. Fluff the couscous with a fork and add it to the bowl with the tomato mixture.
  2. Toss everything together until well combined.
  3. Serve warm or at room temperature.
