Ingredients
  

Marinade
  • 1 cup coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 2 cloves garlic minced
  • 1 inch ginger grated
Chicken
  • 1.5 pounds chicken breast cut into cubes
Garnish
  • 1/4 cup fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine coconut milk, red curry paste, fish sauce, brown sugar, lime juice, minced garlic, and grated ginger. Mix well.
Marinate the Chicken
  1. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken onto the skewers.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the skewers from the grill and let them rest for a few minutes. Garnish with chopped cilantro and serve with lime wedges.
