Ingredients
  

  • 2 large ripe plantains yellow with black spots
  • 1 cup vegetable oil for frying
  • 1 teaspoon salt optional

Preparation
  1. Peel the ripe plantains by cutting off the ends and making a slit along the length of the skin. Remove the skin carefully.
  2. Slice the plantains diagonally into 1-inch thick pieces.
Cooking
  1. Heat the vegetable oil in a skillet over medium heat.
  2. Once the oil is hot, add the sliced plantains in a single layer. Fry for about 2-3 minutes on each side until golden brown.
  3. Remove the fried plantains from the skillet and place them on paper towels to drain excess oil. Sprinkle with salt if desired.
