Ingredients
  

Chicken
  • 1 lb boneless chicken breast cut into bite-sized pieces
  • 1 cup cornstarch for coating
  • 2 large eggs beaten
  • 1 cup vegetable oil for frying
Vegetables
  • 1 cup bell peppers sliced (red and green)
  • 1 cup pineapple chunks canned or fresh
  • 1 medium onion sliced
Sauce
  • 1/2 cup ketchup
  • 1/2 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tbsp cornstarch mixed with 2 tbsp water

Method
 

Prepare the Chicken
  1. In a mixing bowl, coat the chicken pieces with cornstarch, then dip in the beaten eggs.
  2. Heat vegetable oil in a frying pan over medium-high heat.
  3. Fry the chicken pieces until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
Make the Sauce
  1. In a separate bowl, combine ketchup, rice vinegar, soy sauce, and brown sugar. Mix well.
  2. Add the cornstarch mixed with water to the sauce and stir until thickened.
Stir-Fry
  1. In the same pan, add bell peppers, onion, and pineapple. Stir-fry for 3-4 minutes until vegetables are tender.
  2. Add the fried chicken and sauce to the pan. Toss to coat everything evenly and heat through.
Serve
  1. Serve hot over rice or noodles.

Notes
