Ingredients
  

For the Street Corn Filling
  • 2 ears corn grilled and kernels removed
  • 1 cup mayonnaise or Greek yogurt for a lighter option
  • 1 cup cotija cheese crumbled
  • 1 teaspoon chili powder
  • 1 teaspoon lime juice freshly squeezed
  • 1 tablespoon cilantro chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
For Assembly
  • 4 pieces pita bread whole wheat or regular
  • 1 avocado sliced optional
  • 1 cup fresh cilantro for garnish
  • 1 lime cut into wedges for serving

Method
 

Prepare the Street Corn Filling
  1. Grill the corn until charred, then remove kernels and place in a mixing bowl.
  2. Add mayonnaise, cotija cheese, chili powder, lime juice, cilantro, salt, and pepper to the bowl. Mix well.
Assemble the Tacos
  1. Warm the pita bread on the grill or in a skillet until soft.
  2. Spoon the street corn filling into each pita pocket.
  3. Top with sliced avocado and additional cilantro if desired.
  4. Serve with lime wedges on the side.
