  • 2 cups fresh strawberries hulled and chopped
  • 1 cup granulated sugar adjust to taste
  • 1 tablespoon lemon juice freshly squeezed
  • 1 packet pectin optional, for thicker jam

Method
 

Prepare the Strawberries
  1. Wash and hull the strawberries, then chop them into small pieces.
Cook the Jam
  1. In a saucepan, combine the chopped strawberries, sugar, and lemon juice. Stir over medium heat until the sugar dissolves.
  2. Increase the heat and bring the mixture to a boil, stirring frequently. If using pectin, add it according to package instructions.
  3. Boil for about 10-15 minutes, or until the mixture thickens to your desired consistency.
Jar the Jam
  1. Remove the saucepan from heat and let it cool slightly. Pour the jam into sterilized jars using a canning funnel.
  2. Seal the jars and let them cool completely at room temperature.
