Ingredients
  

Squash
  • 2 medium butternut squash peeled and cubed
Seasoning
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder
Topping
  • 1 cup Parmesan cheese grated
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the butternut squash.
  3. In a large bowl, toss the squash cubes with olive oil, salt, black pepper, and garlic powder until evenly coated.
Roasting
  1. Spread the seasoned squash evenly on a baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, or until tender and lightly browned, stirring halfway through.
Finishing Touches
  1. Remove the squash from the oven and sprinkle the grated Parmesan cheese over the top.
  2. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  3. Garnish with fresh parsley before serving.
