Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts cut into bite-sized pieces
Vegetables
  • 1 cup asparagus trimmed and cut into 2-inch pieces
  • 1 cup cherry tomatoes halved
  • 1 cup baby spinach
  • 1 medium red bell pepper diced
Herbs and Spices
  • 2 tablespoons olive oil for cooking
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 1/2 cup chicken broth

Method
 

Cooking the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes.
Adding Vegetables
  1. Add garlic, asparagus, and red bell pepper to the skillet. Sauté for 3-4 minutes until the vegetables are tender.
  2. Stir in cherry tomatoes and spinach, cooking until the spinach wilts, about 2 minutes.
Finishing Touches
  1. Pour in the chicken broth and sprinkle with oregano and thyme. Stir to combine and let simmer for an additional 2-3 minutes.
  2. Adjust seasoning if necessary and serve warm.
