Prepare the Filling
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute.
- Add sliced mushrooms and cook until they are soft, about 5 minutes.
- Stir in chopped spinach, salt, and pepper. Cook until spinach is wilted, about 2-3 minutes.
Assemble and Cook Quesadillas
- Place one tortilla in the skillet and sprinkle half of the cheese over it.
- Add half of the spinach and mushroom filling on top of the cheese.
- Sprinkle the remaining cheese on top and cover with another tortilla.
- Cook for about 3-4 minutes on each side until golden brown and cheese is melted.
- Remove from skillet, cut into wedges, and serve warm.
