Ingredients

  • 3 pounds corned beef brisket with spice packet
  • 4 cups beef broth or water
  • 1 medium onion sliced
  • 4 cloves garlic minced
  • 1 teaspoon black peppercorns
Vegetables
  • 4 medium carrots peeled and cut into chunks
  • 1 head cabbage cut into wedges

Method
 

Preparation
  1. Place the corned beef brisket in the slow cooker, fat side up.
  2. Add the sliced onion, minced garlic, black peppercorns, and bay leaves around the brisket.
  3. Pour the beef broth or water over the brisket.
Cooking
  1. Cover and cook on low for 8 hours or until the meat is tender.
  2. Add the carrots and cabbage during the last 2 hours of cooking.
Serving
  1. Remove the corned beef from the slow cooker and let it rest for 10 minutes before slicing.
  2. Serve with the cooked vegetables and some of the cooking liquid.
