Preparation
- Place the corned beef brisket in the slow cooker, fat side up.
- Add the sliced onion, minced garlic, black peppercorns, and bay leaves around the brisket.
- Pour the beef broth or water over the brisket.
Cooking
- Cover and cook on low for 8 hours or until the meat is tender.
- Add the carrots and cabbage during the last 2 hours of cooking.
Serving
- Remove the corned beef from the slow cooker and let it rest for 10 minutes before slicing.
- Serve with the cooked vegetables and some of the cooking liquid.
