For the Shrimp
  • 1 lb large shrimp (peeled and deveined) Fresh or frozen shrimp work well.

  • 1/4 teaspoon black pepper Balances flavors.
For the Sauce
  • 1 cup cherry tomatoes (halved) Their sweetness brightens the sauce.
  • 1/2 cup vegetable broth or white wine Use broth for a non-alcoholic version.
  • 1 tablespoon lemon juice Freshly squeezed adds acidity.
  • 1/4 cup fresh parsley (chopped) Adds color and freshness.

Method
 

Cooking Instructions
  1. Start by bringing a large pot of salted water to a rolling boil.
  2. Add your favorite pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.
  3. While the pasta cooks, heat olive oil in a skillet over medium heat. Add the shrimp and sauté for 2-3 minutes until they turn pink and opaque.
  4. Toss in minced garlic during the last minute of cooking the shrimp. Sauté until fragrant, about 30 seconds.
  5. Drain the pasta, reserving a bit of pasta water. Add the pasta directly into the skillet with the shrimp, then mix together gently.
  6. Sprinkle salt, pepper, and red pepper flakes over the shrimp and pasta mixture. Toss everything well.
  7. Optional: Garnish with freshly chopped parsley and a squeeze of lemon juice for brightness.
