Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts
Spices
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Taco Assembly
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Prepare the Chicken
  1. Place the chicken breasts in a slow cooker and sprinkle with chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through and tender.
  3. Once cooked, shred the chicken using two forks and mix it with the juices in the slow cooker.
Assemble the Tacos
  1. Warm the corn tortillas in a skillet over medium heat until pliable.
  2. Fill each tortilla with shredded chicken, then top with lettuce, tomatoes, cheese, sour cream, and cilantro.
  3. Serve with lime wedges on the side.
