Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Icing
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 drop green food coloring

Method
 

Prepare the Cookie Dough
  1. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Bake the Cookies
  1. Preheat the oven to 350°F (175°C).
  2. Roll out the chilled dough on a floured surface to about 1/4 inch thick.
  3. Use a shamrock-shaped cookie cutter to cut out cookies and place them on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
  5. Allow the cookies to cool completely on a wire rack.
Decorate the Cookies
  1. In a bowl, mix together the powdered sugar, milk, vanilla extract, and green food coloring until smooth.
  2. Use a piping bag or a knife to spread the icing on the cooled cookies.
  3. Let the icing set before serving.
