Ingredients
  

Cupcake Batter
  • 1 cup canned pumpkin puree Ensure it's pure pumpkin, not pie filling
  • 2 eggs large eggs
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon Optional for flavor
  • 1/4 cup unsweetened applesauce For moisture
Frosting
  • 1 cup plain yogurt Use unsweetened, plain yogurt
  • 1 tablespoon peanut butter Make sure it's dog-safe, no xylitol

Method
 

Prepare the Cupcakes
  1. Preheat the oven to 350°F (175°C) and grease the muffin tin.
  2. In a mixing bowl, combine the pumpkin puree, eggs, and applesauce.
  3. In a separate bowl, mix the whole wheat flour, baking soda, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool completely before frosting.
Make the Frosting
  1. In a bowl, mix the plain yogurt and peanut butter until smooth.
  2. Once the cupcakes are cooled, spread or pipe the frosting on top.
