Method
Prepare the Cupcakes
- Preheat the oven to 350°F (175°C) and grease the muffin tin.
- In a mixing bowl, combine the pumpkin puree, eggs, and applesauce.
- In a separate bowl, mix the whole wheat flour, baking soda, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely before frosting.
Make the Frosting
- In a bowl, mix the plain yogurt and peanut butter until smooth.
- Once the cupcakes are cooled, spread or pipe the frosting on top.
