Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup prune juice preferably unsweetened
  • 1/4 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup chopped nuts optional
  • 1/2 cup chocolate chips optional

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the egg, prune juice, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the nuts and/or chocolate chips if using.
Bake the Cookies
  1. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
