  • 1 cup red bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 medium jalapeño seeded and minced
  • 1 lime lime juice freshly squeezed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. In a mixing bowl, combine the diced pineapple, red bell pepper, red onion, cilantro, and minced jalapeño.
  2. Drizzle with lime juice, and season with salt and black pepper.
  3. Toss gently to combine all ingredients evenly.
  4. Let the salsa sit for at least 10 minutes to allow flavors to meld.
