Ingredients
  

Marinade
  • 1 cup pineapple juice freshly squeezed if possible
  • 1/4 cup soy sauce low sodium recommended
  • 2 tablespoons honey
  • 1 tablespoon lime juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1/2 teaspoon black pepper
Chicken
  • 4 pieces boneless chicken breasts skinless
Garnish
  • 1/4 cup fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine pineapple juice, soy sauce, honey, lime juice, minced garlic, grated ginger, and black pepper. Mix well.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear.
Serve
  1. Remove the chicken from the grill and let it rest for a few minutes.
  2. Serve garnished with chopped cilantro and lime wedges.
