Ingredients

  • 2 cups brown rice uncooked
Vegetables
  • 1 cup bell pepper diced
  • 1 cup carrots shredded
  • 1 cup snap peas trimmed
Fruits
  • 1 cup pineapple fresh, diced
Sauce
  • 3 tablespoons soy sauce low sodium
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
Garnish
  • 2 tablespoons green onions chopped
  • 1 tablespoon sesame seeds

Method
 

Prepare the Rice
  1. Rinse the brown rice under cold water until the water runs clear. Cook the rice according to the package instructions, using a rice cooker or stovetop method.
Sauté the Vegetables
  1. In a skillet over medium heat, add sesame oil. Once hot, add the bell pepper, carrots, and snap peas. Sauté for about 5-7 minutes until tender.
Combine Ingredients
  1. Add the cooked brown rice to the skillet with the sautéed vegetables. Pour in the soy sauce and honey, stirring well to combine all ingredients. Add the diced pineapple and mix gently.
Serve
  1. Divide the pineapple brown rice mixture into bowls. Garnish with chopped green onions and sesame seeds before serving.
