- Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous pinch of salt for flavor.
- Add your favorite pasta to the boiling water and cook according to package instructions, usually around 8-10 minutes, until al dente. Stir occasionally to prevent sticking.
- While the pasta cooks, heat a tablespoon of olive oil in a large skillet over medium heat. Add fresh spinach and sauté for 3-4 minutes until wilted and vibrant green.
- Once the pasta is ready, drain it and reserve a cup of the cooking water. Add the drained pasta directly to the skillet with sautéed spinach, tossing gently to combine.
- Pour in reserved pasta water as needed, along with grated Parmesan cheese, salt, and pepper to taste. Stir until creamy and well mixed.
