Ingredients

For the Pasta
  • 8 oz spaghetti or fettuccine Use your favorite pasta shape; whole wheat pasta adds extra fiber
  • 2 tablespoons olive oil Helps sauté the spinach and adds a rich flavor; avocado oil is a good substitute
  • 3 cloves garlic (minced) Fresh garlic brings vibrant flavor; use 1 teaspoon of garlic powder if in a pinch
  • 1/2 teaspoon red pepper flakes Adds a touch of heat; adjust to your spice preference
For the Spinach Sauce
  • 4 cups fresh spinach (washed) Baby spinach is mild and tender, but you can use regular spinach too
  • 1/2 cup heavy cream For a rich, creamy sauce; substitute with half-and-half for lighter options
  • 1/2 cup grated Parmesan cheese Adds saltiness and depth; nutritional yeast works for a vegan alternative
  • 1/4 teaspoon salt Kosher salt preferred; adjust based on cheese's saltiness
For Garnish
  • 1/4 cup pine nuts (toasted) Adds crunch and nutty flavor; walnuts or sunflower seeds are great alternatives
  • Fresh basil leaves (for serving) Brightens the dish beautifully; parsley can be used if basil is unavailable
  • Extra Parmesan cheese (for topping) A sprinkle adds richness to finish off this delightful dish

Method

Cooking Instructions
  1. Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous pinch of salt for flavor.
  2. Add your favorite pasta to the boiling water and cook according to package instructions, usually around 8-10 minutes, until al dente. Stir occasionally to prevent sticking.
  3. While the pasta cooks, heat a tablespoon of olive oil in a large skillet over medium heat. Add fresh spinach and sauté for 3-4 minutes until wilted and vibrant green.
  4. Once the pasta is ready, drain it and reserve a cup of the cooking water. Add the drained pasta directly to the skillet with sautéed spinach, tossing gently to combine.
  5. Pour in reserved pasta water as needed, along with grated Parmesan cheese, salt, and pepper to taste. Stir until creamy and well mixed.
