Ingredients
  

Pasta
  • 12 oz Fettuccine or spaghetti or any pasta of choice
Vegetables
  • 8 oz Mushrooms sliced
  • 4 cups Fresh spinach washed and chopped
  • 2 cloves Garlic minced
Sauce
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese grated
  • 1 tbsp Olive oil
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Sauce
  1. In a skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté until they are golden brown, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the fresh spinach and cook until wilted.
  4. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and black pepper.
Combine and Serve
  1. Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes to heat through.
  2. Serve immediately, garnished with extra Parmesan cheese if desired.
