Ingredients
  

Pasta
  • 12 oz Pasta (fettuccine or spaghetti) Use your preferred type of pasta.
Vegetables
  • 8 oz Mushrooms Sliced
  • 4 cups Fresh Spinach Washed and chopped
  • 2 cloves Garlic Minced
Sauce
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese Grated
  • 2 tbsp Olive Oil For sautéing
  • 1 tsp Salt To taste
  • 1 tsp Black Pepper To taste

Method
 

Cooking Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Preparing the Sauce
  1. In a skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté until they are golden brown, about 5-7 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the fresh spinach and cook until wilted.
  4. Pour in the heavy cream and bring to a simmer. Add the grated Parmesan cheese, stirring until melted and smooth.
  5. Season with salt and black pepper to taste.
Combining
  1. Add the drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency.
  2. Serve immediately, garnished with additional Parmesan cheese if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half or a plant-based cream alternative.
