- In a large bowl, mix flour, salt, and water until a soft dough forms. Knead for about 5 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- In a skillet, heat oil over medium heat. Add thinly sliced onions and sauté until they are golden and caramelized, about 10-12 minutes.
- Once rested, divide the dough into equal portions (about 6). Roll each piece into a ball, then flatten gently with your palms.
- On a floured surface, roll each ball into a flat circle about ¼ inch thick.
- Heat a skillet or griddle over medium-high heat. Cook each flatbread for about 2-3 minutes on each side until golden brown.
- Remove from heat and immediately top with the sautéed onions while still warm.
