Ingredients
  

For the Dough
  • 2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 teaspoon salt Kosher salt preferred.
  • 1 tablespoon olive oil Can substitute with melted butter.
  • 3/4 cup warm water About 110°F.
For the Topping
  • 2 medium onions Sliced thin, sweet onions preferred.
  • 1 tablespoon olive oil For sautéing the onions.
  • 1 teaspoon dried thyme Fresh thyme can be used.
  • 1 teaspoon black pepper Adjust based on spice preference.
For Garnish
  • 1/4 cup fresh parsley Chopped, optional.
  • 1/2 cup feta cheese Crumble, optional.

Method
 

Preparation
  1. In a large bowl, mix flour, salt, and water until a soft dough forms. Knead for about 5 minutes until smooth and elastic.
  2. Cover the dough with a damp cloth and let it rest for 30 minutes.
  3. In a skillet, heat oil over medium heat. Add thinly sliced onions and sauté until they are golden and caramelized, about 10-12 minutes.
  4. Once rested, divide the dough into equal portions (about 6). Roll each piece into a ball, then flatten gently with your palms.
  5. On a floured surface, roll each ball into a flat circle about ¼ inch thick.
  6. Heat a skillet or griddle over medium-high heat. Cook each flatbread for about 2-3 minutes on each side until golden brown.
  7. Remove from heat and immediately top with the sautéed onions while still warm.
