Ingredients
  

Crust
  • 1 sheet puff pastry thawed
Filling
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup cheddar cheese shredded
  • 1 cup spinach chopped
  • 1/2 cup ham diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the crust
  1. Preheat the oven to 375°F (190°C). Roll out the puff pastry and cut it into circles to fit the muffin tin cups.
  2. Press the pastry circles into the muffin tin to form the crusts.
Make the filling
  1. In a mixing bowl, whisk together the eggs and heavy cream until well combined.
  2. Stir in the cheddar cheese, spinach, ham, salt, and black pepper.
Assemble and bake
  1. Pour the filling mixture into each pastry-lined muffin cup, filling them about 3/4 full.
  2. Bake in the preheated oven for 20 minutes, or until the filling is set and the tops are golden brown.
  3. Allow to cool slightly before removing from the muffin tin.
