Method
Prepare the crust
- Preheat the oven to 375°F (190°C). Roll out the puff pastry and cut it into circles to fit the muffin tin cups.
- Press the pastry circles into the muffin tin to form the crusts.
Make the filling
- In a mixing bowl, whisk together the eggs and heavy cream until well combined.
- Stir in the cheddar cheese, spinach, ham, salt, and black pepper.
Assemble and bake
- Pour the filling mixture into each pastry-lined muffin cup, filling them about 3/4 full.
- Bake in the preheated oven for 20 minutes, or until the filling is set and the tops are golden brown.
- Allow to cool slightly before removing from the muffin tin.
