Method
Prepare the crust
- Preheat the oven to 375°F (190°C). Roll out the pastry dough and cut into circles to fit the muffin tin.
- Press the dough circles into the muffin tin to form small cups.
Make the filling
- In a mixing bowl, whisk together the eggs, heavy cream, salt, black pepper, and dried herbs until well combined.
- Stir in the shredded cheese and diced vegetables.
Assemble and bake
- Pour the egg mixture into each pastry cup, filling them about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the filling is set and the tops are golden.
- Remove from the oven and let cool slightly before serving.
