Ingredients
  

Crust
  • 1 package pre-made pastry dough thawed
Filling
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup diced vegetables e.g., bell peppers, spinach, or onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried herbs e.g., thyme or oregano

Method
 

Prepare the crust
  1. Preheat the oven to 375°F (190°C). Roll out the pastry dough and cut into circles to fit the muffin tin.
  2. Press the dough circles into the muffin tin to form small cups.
Make the filling
  1. In a mixing bowl, whisk together the eggs, heavy cream, salt, black pepper, and dried herbs until well combined.
  2. Stir in the shredded cheese and diced vegetables.
Assemble and bake
  1. Pour the egg mixture into each pastry cup, filling them about 3/4 full.
  2. Bake in the preheated oven for 20-25 minutes, or until the filling is set and the tops are golden.
  3. Remove from the oven and let cool slightly before serving.
