Prepare Sago
- Rinse the sago pearls under cold water until the water runs clear.
- In a pot, bring 4 cups of water to a boil. Add the sago pearls and cook for about 30 minutes until translucent.
- Once cooked, remove from heat and let it sit covered for 10 minutes. Drain and rinse under cold water.
Make Mango Puree
- In a blender, combine the diced mangoes, sugar, and lime juice. Blend until smooth.
Combine Ingredients
- In a bowl, mix the cooked sago pearls with coconut milk and sugar. Stir well.
- To serve, layer the sago mixture and mango puree in serving bowls.
- Chill in the refrigerator for at least 30 minutes before serving.
