Ingredients
  

Sago Mixture
  • 1 cup sago pearls tapioca pearls
  • 4 cups water for boiling sago
Mango Puree
  • 2 cups ripe mangoes peeled and diced
  • 1 tablespoon sugar optional, adjust to taste
  • 1 tablespoon lime juice for added flavor
Coconut Milk
  • 1 cup coconut milk unsweetened
  • 1 tablespoon sugar optional, adjust to taste

Method
 

Prepare Sago
  1. Rinse the sago pearls under cold water until the water runs clear.
  2. In a pot, bring 4 cups of water to a boil. Add the sago pearls and cook for about 30 minutes until translucent.
  3. Once cooked, remove from heat and let it sit covered for 10 minutes. Drain and rinse under cold water.
Make Mango Puree
  1. In a blender, combine the diced mangoes, sugar, and lime juice. Blend until smooth.
Combine Ingredients
  1. In a bowl, mix the cooked sago pearls with coconut milk and sugar. Stir well.
  2. To serve, layer the sago mixture and mango puree in serving bowls.
  3. Chill in the refrigerator for at least 30 minutes before serving.

Notes
