Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1/4 teaspoon salt
Filling
  • 1 cup heavy cream chilled
  • 1/2 cup limoncello
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly.
  2. Press the mixture into the bottom of a 9x9 inch baking pan. Bake for 15 minutes or until lightly golden.
Make the filling
  1. In a separate bowl, whisk together the heavy cream, limoncello, sugar, eggs, lemon zest, lemon juice, and vanilla extract until smooth.
  2. Pour the filling over the baked crust and return to the oven. Bake for an additional 15-20 minutes, until set.
Cool and serve
  1. Allow the bars to cool completely in the pan. Refrigerate for at least 2 hours before cutting into squares.
  2. Serve chilled, optionally dusted with powdered sugar.
