Method
Prepare the crust
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly.
- Press the mixture into the bottom of a 9x9 inch baking pan. Bake for 15 minutes or until lightly golden.
Make the filling
- In a separate bowl, whisk together the heavy cream, limoncello, sugar, eggs, lemon zest, lemon juice, and vanilla extract until smooth.
- Pour the filling over the baked crust and return to the oven. Bake for an additional 15-20 minutes, until set.
Cool and serve
- Allow the bars to cool completely in the pan. Refrigerate for at least 2 hours before cutting into squares.
- Serve chilled, optionally dusted with powdered sugar.
