Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 1 cup heavy cream chilled
  • 1/2 cup limoncello
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin unflavored
  • 3 tablespoons water for gelatin

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a 9x9 inch baking pan lined with parchment paper. Bake for 10 minutes, then remove and let cool.
Make the Filling
  1. In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.
  2. In a large mixing bowl, whip the heavy cream until soft peaks form. In another bowl, combine limoncello, powdered sugar, lemon zest, and vanilla extract.
  3. Heat the bloomed gelatin in the microwave for about 10 seconds until dissolved. Stir it into the limoncello mixture.
  4. Gently fold the limoncello mixture into the whipped cream until fully incorporated.
Assemble and Chill
  1. Pour the filling over the cooled crust and spread evenly. Cover with plastic wrap and refrigerate for at least 2 hours or until set.
  2. Once set, cut into bars and serve chilled. Enjoy!

Notes

For a stronger lemon flavor, increase the amount of lemon zest. These bars can be garnished with additional lemon zest or whipped cream before serving.
