Ingredients
  

Cookies
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons limoncello
  • 2 cups all-purpose flour sifted
  • 1 teaspoon baking powder
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
Lemon Glaze
  • 1 cup powdered sugar
  • 2 tablespoons limoncello
  • 1 tablespoon lemon juice

Method
 

Prepare the Cookie Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and limoncello until well combined.
  4. In another bowl, whisk together the flour, baking powder, lemon zest, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cookies
  1. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Prepare the Lemon Glaze
  1. In a small bowl, whisk together the powdered sugar, limoncello, and lemon juice until smooth.
  2. Drizzle the glaze over the cooled cookies.
