Method
Prepare the Marinade
- In a mixing bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, garlic, ginger, rice vinegar, sesame oil, and black pepper until well combined.
Marinate the Chicken
- Place the chicken thighs in a large resealable bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
Grill the Chicken
- Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
Serve
- Remove the chicken from the grill and let it rest for a few minutes before serving. Serve with additional pineapple slices if desired.
