Ingredients
  

Marinade
  • 1 cup soy sauce low sodium recommended
  • 1/2 cup brown sugar packed
  • 1/4 cup ketchup
  • 1/4 cup pineapple juice fresh or canned
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon black pepper freshly ground
Chicken
  • 4 pieces chicken thighs bone-in, skin-on

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, garlic, ginger, rice vinegar, sesame oil, and black pepper until well combined.
Marinate the Chicken
  1. Place the chicken thighs in a large resealable bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
Serve
  1. Remove the chicken from the grill and let it rest for a few minutes before serving. Serve with additional pineapple slices if desired.

Notes
