Ingredients
  

For the Sauce
  • 2 medium Tomatoes diced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 medium Jalapeño seeded and chopped
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 tablespoon Olive oil
For the Eggs
  • 8 large Eggs
  • 4 small Corn tortillas warmed
  • 1 cup Fresh cilantro chopped for garnish
  • 1 cup Feta cheese crumbled for topping

Method
 

Prepare the Sauce
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  2. Add minced garlic and chopped jalapeño, cooking for another minute.
  3. Stir in diced tomatoes, cumin, and salt. Simmer for about 10 minutes until the sauce thickens.
  4. Blend the sauce until smooth, then return to the skillet to keep warm.
Cook the Eggs
  1. In a separate skillet, fry the eggs sunny-side up or to your desired doneness.
  2. While the eggs are cooking, warm the corn tortillas in a dry skillet until pliable.
Assemble the Dish
  1. Place a warm tortilla on each serving plate.
  2. Top each tortilla with a fried egg and spoon the sauce over the top.
  3. Garnish with chopped cilantro and crumbled feta cheese.
