Ingredients
  

Potatoes
  • 2 pounds Yukon Gold Potatoes washed and cut into cubes
Herbs and Seasoning
  • 3 tablespoons Olive Oil extra virgin
  • 1 teaspoon Dried Rosemary or fresh, chopped
  • 1 teaspoon Dried Thyme or fresh, chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper freshly ground

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the cubed potatoes with olive oil, rosemary, thyme, garlic powder, salt, and pepper. Toss until the potatoes are evenly coated.
Roasting
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 30-40 minutes, or until golden brown and crispy, flipping halfway through.
  3. Remove from the oven and let cool for a few minutes before serving.
