Potatoes
  • 2 pounds baby potatoes halved or quartered
Herbs and Seasoning
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the halved potatoes with olive oil, rosemary, thyme, garlic powder, salt, and pepper.
  3. Toss until the potatoes are evenly coated.
Roasting
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
  3. Remove from the oven and let cool for a few minutes before serving.
