Ingredients
  

Casserole Base
  • 1 lb ground chicken
  • 1 packet taco seasoning
  • 1 cup black beans cooked and drained
  • 1 cup corn canned or frozen
  • 1 cup salsa
  • 4 small corn tortillas cut into strips
  • 2 cups shredded cheese cheddar or Mexican blend

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground chicken until browned, about 5-7 minutes.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet and stir to combine. Cook for an additional 5 minutes.
  4. In a baking dish, layer half of the tortilla strips, followed by half of the chicken mixture, and half of the cheese. Repeat the layers.
  5. Cover the baking dish with foil and bake for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.
