Prepare the Casserole
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground chicken until browned, about 5-7 minutes.
- Add the taco seasoning, black beans, corn, and salsa to the skillet, stirring to combine. Cook for an additional 5 minutes.
- In a baking dish, layer half of the tortillas, followed by half of the chicken mixture, and half of the cheese. Repeat the layers.
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
- Let the casserole cool for a few minutes before serving.
- Top with sour cream, lettuce, tomatoes, and cilantro as desired.

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the cooking time if baking from cold.
