Ingredients
  

Casserole Base
  • 1 lb Ground Chicken Can substitute with ground turkey
  • 1 packet Taco Seasoning
  • 1 cup Black Beans Drained and rinsed
  • 1 cup Corn Frozen or canned
  • 1 cup Salsa
  • 4 large Tortillas Corn or flour
  • 2 cups Shredded Cheese Cheddar or Mexican blend
Toppings
  • 1 cup Sour Cream For serving
  • 1 cup Chopped Lettuce For serving
  • 1 cup Diced Tomatoes For serving
  • 1/4 cup Chopped Cilantro For garnish

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground chicken until browned, about 5-7 minutes.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet, stirring to combine. Cook for an additional 5 minutes.
  4. In a baking dish, layer half of the tortillas, followed by half of the chicken mixture, and half of the cheese. Repeat the layers.
  5. Cover the baking dish with foil and bake for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Let the casserole cool for a few minutes before serving.
  2. Top with sour cream, lettuce, tomatoes, and cilantro as desired.

Notes

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the cooking time if baking from cold.
