Vegetables
  • 2 medium eggplants cut into bite-sized pieces
  • 2 tablespoons olive oil for sautéing
  • 4 cloves garlic minced
  • 1 medium jalapeño finely chopped, seeds removed for less heat
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons soy sauce for flavor
  • 1 tablespoon sesame oil for finishing
Garnish
  • 2 tablespoons green onions sliced, for garnish
  • 1 tablespoon sesame seeds toasted, for garnish

Method
 

Cooking the Eggplant
  1. Heat olive oil in a skillet over medium heat.
  2. Add the eggplant pieces and sauté for about 5-7 minutes until they start to soften.
  3. Stir in the minced garlic and chopped jalapeño, cooking for another 2-3 minutes until fragrant.
  4. Season with salt, black pepper, and soy sauce, cooking for an additional 5 minutes until the eggplant is tender.
  5. Drizzle with sesame oil before removing from heat.
Serving
  1. Transfer the eggplant to a serving dish.
  2. Garnish with sliced green onions and toasted sesame seeds.
  3. Serve warm as a side or main dish.

Notes

For a milder version, reduce the amount of jalapeño or remove the seeds.
