Method
Prepare the Cake
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk until well combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Make the Frosting
- In a mixing bowl, beat the softened butter until creamy.
- Gradually add powdered sugar, mixing on low speed until combined.
- Add heavy cream and vanilla extract, then beat on high speed until fluffy and smooth.
- Divide the frosting into separate bowls and tint each with food coloring to create galaxy colors.
Assemble the Cake
- Place one cake layer on a serving plate. Spread a layer of frosting on top.
- Top with the second cake layer and frost the top and sides of the cake with the galaxy buttercream.
- Use an offset spatula to create a swirling galaxy effect with the different colored frostings.
- Sprinkle edible glitter and star-shaped sprinkles on top for decoration.
- Chill the cake for 30 minutes to set the frosting before serving.
