Ingredients
  

Fruits
  • 2 pounds fresh figs washed and chopped
Sweeteners
  • 1 cup granulated sugar
  • 1 cup brown sugar
Acid
  • 1 lemon juice freshly squeezed
Spices
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon optional

Method
 

Prepare the Figs
  1. Wash and chop the fresh figs, removing the stems.
Cook the Mixture
  1. In a large pot, combine the chopped figs, granulated sugar, brown sugar, and lemon juice.
  2. Cook over medium heat, stirring frequently until the sugars dissolve.
  3. Bring the mixture to a boil, then reduce heat and simmer for about 45 minutes, stirring occasionally.
Finish and Jar
  1. Once the mixture has thickened, stir in the vanilla extract and cinnamon if using.
  2. Pour the hot preserves into sterilized canning jars using a ladle and canning funnel.
  3. Seal the jars and allow them to cool completely before storing.
