Eggplant Beef Crunch Wraps

Delicious and hearty wraps filled with seasoned beef, roasted eggplant, and fresh vegetables, all wrapped in a crispy tortilla.

Ingredients
  

Beef Filling
  • 1 lb ground beef preferably lean
  • 1 medium eggplant diced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
Wrap Assembly
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream for serving

Method
 

Prepare the Filling
  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  3. Add ground beef to the skillet, cook until browned. Drain excess fat.
  4. Stir in diced eggplant, soy sauce, cumin, paprika, salt, and black pepper. Cook until eggplant is tender, about 10 minutes.
Assemble the Wraps
  1. Lay a tortilla flat and add a portion of the beef filling in the center.
  2. Top with shredded lettuce, diced tomatoes, and shredded cheese.
  3. Fold the sides of the tortilla over the filling, then roll from the bottom to form a wrap.
  4. Place wraps seam-side down on a baking sheet and bake for 10-15 minutes until crispy.
Serve
  1. Remove from oven and let cool slightly. Serve with sour cream on the side.
