Ingredients
  

Beef and Marinade
  • 1 pound beef sirloin sliced thinly
  • 1/4 cup soy sauce for marinade
  • 2 tablespoons brown sugar for marinade
  • 1 tablespoon sesame oil for marinade
  • 2 cloves garlic minced
  • 1 inch ginger grated
Vegetables
  • 1 medium eggplant sliced into rounds
  • 1 bell pepper red sliced
  • 1 cup green onions chopped
Rice
  • 2 cups jasmine rice or any preferred rice
  • 4 cups water
BBQ Sauce
  • 1/2 cup BBQ sauce store-bought or homemade

Method
 

Prepare the Marinade
  1. In a bowl, combine soy sauce, brown sugar, sesame oil, garlic, and ginger. Add the sliced beef and marinate for at least 30 minutes.
Cook the Rice
  1. Rinse the jasmine rice under cold water until the water runs clear. In a rice cooker, combine the rice and water, and cook according to the manufacturer's instructions.
Grill the Vegetables
  1. Preheat the grill to medium-high heat. Grill the eggplant rounds and bell pepper slices for about 5-7 minutes on each side until tender and slightly charred.
Cook the Beef
  1. In a skillet over medium-high heat, cook the marinated beef for about 5-7 minutes until browned and cooked through.
Assemble the Bowls
  1. In serving bowls, layer the cooked rice, grilled vegetables, and beef. Drizzle with BBQ sauce and top with chopped green onions.
