Ingredients
  

Meat and Vegetables
  • 1 lb ground beef or ground turkey
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 1 can corn drained
  • 1 can black beans drained and rinsed
Sauce
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese cheddar or Mexican blend
Topping
  • 1 pkg tater tots frozen

Method
 

Prepare the Casserole
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  3. Add chopped onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
  4. Stir in the drained corn and black beans, mixing well.
  5. In a mixing bowl, combine sour cream, cream of mushroom soup, and shredded cheese. Mix until smooth.
  6. Add the sauce mixture to the skillet and stir until everything is well combined.
  7. Transfer the mixture to a casserole dish and spread evenly.
  8. Top with tater tots, arranging them in a single layer.
  9. Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before serving.
