Prepare the Meat
- Preheat the oven to 350°F (175°C). In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add chopped onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
Combine Ingredients
- Stir in the corn, black beans, cream of mushroom soup, and half of the cheddar cheese. Mix well.
- Transfer the mixture to a greased casserole dish.
Add Tater Tots
- Arrange the tater tots on top of the beef mixture in a single layer.
- Sprinkle the remaining cheddar cheese on top of the tater tots.
Bake
- Bake in the preheated oven for 30 minutes or until the tater tots are golden brown and crispy.
- Let cool for a few minutes before serving.
