Cowboy Casserole

Ingredients
  

Meat and Vegetables
  • 1 lb ground beef or ground turkey
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 1 can corn drained
  • 1 can black beans drained and rinsed
Casserole Base
  • 1 can cream of mushroom soup
  • 1 cup cheddar cheese shredded
Topping
  • 1 bag tater tots about 32 oz

Method
 

Prepare the Meat
  1. Preheat the oven to 350°F (175°C). In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add chopped onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
Combine Ingredients
  1. Stir in the corn, black beans, cream of mushroom soup, and half of the cheddar cheese. Mix well.
  2. Transfer the mixture to a greased casserole dish.
Add Tater Tots
  1. Arrange the tater tots on top of the beef mixture in a single layer.
  2. Sprinkle the remaining cheddar cheese on top of the tater tots.
Bake
  1. Bake in the preheated oven for 30 minutes or until the tater tots are golden brown and crispy.
  2. Let cool for a few minutes before serving.
