Ingredients
  

Couscous Base
  • 1 cup couscous uncooked
  • 1 cup vegetable broth or water
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare Couscous
  1. In a pot, bring the vegetable broth to a boil. Add couscous, stir, cover, and remove from heat. Let it sit for 5 minutes.
  2. Fluff the couscous with a fork and let it cool.
Mix Vegetables
  1. In a large bowl, combine cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
Make Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
Combine
  1. Add the cooled couscous to the vegetable mixture. Pour the dressing over the salad and toss to combine.
  2. Serve chilled or at room temperature.
