Ingredients
  

Taco Filling
  • 2 cups shredded corned beef
  • 1 cup shredded cabbage for topping
  • 1 cup diced tomatoes for topping
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup sour cream for serving
  • 1 tablespoon taco seasoning optional for extra flavor
Taco Shells
  • 8 pieces soft corn tortillas

Method
 

Prepare the Filling
  1. In a skillet over medium heat, add the shredded corned beef and taco seasoning. Cook until heated through, about 5-7 minutes.
  2. Remove from heat and set aside.
Assemble Tacos
  1. Warm the corn tortillas in a separate skillet or microwave until pliable.
  2. Fill each tortilla with the corned beef mixture, then top with shredded cabbage, diced tomatoes, and shredded cheese.
  3. Serve with sour cream on the side.
