Casserole Base
  • 1 can sweet corn drained
  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg beaten
  • 1 cup shredded cheddar cheese
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup sour cream

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cornmeal, baking powder, and salt.
  3. In another bowl, mix the milk, egg, and sour cream until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the sweet corn and shredded cheddar cheese.
Baking
  1. Pour the mixture into a greased baking dish.
  2. Bake in the preheated oven for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  3. Let it cool for a few minutes before serving.
