Ingredients
  

Vegetables
  • 2 cups corn kernels fresh or canned
  • 1 cup diced tomatoes fresh or canned
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper any color
  • 1/4 cup chopped cilantro fresh
  • 1 medium jalapeño seeded and minced
Seasoning
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. In a mixing bowl, combine corn, diced tomatoes, red onion, bell pepper, cilantro, and jalapeño.
  2. Add lime juice, salt, and black pepper to the bowl and mix well.
  3. Taste and adjust seasoning if necessary.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
